Most everyone can cook a dish or two. My friend Dominic (Uncle D) can cook whole cookboooks worth of Chinese, Malay, Thai, Singaporean and other cuisines. One of the very best dishes he makes is Singapore Laksa. For those not familiar with Laksa, it can be summarized as 'curry noodle soup'. As far as soups and noodle dishes in gravy or sauce, Laksa is perhaps the quintessential Singaporean one.
